Ingredients for Rack Of Lamb With Apple Sauce Recipe

  • Rack of lamb 450 grams

  • Green apples chopped 3 medium

  • Salt to taste

  • Black peppercorns crushed 1/2 teaspoon

  • Olive oil 3 tablespoons

  • Lettuce leaves a few

  • Cumin seeds 1 teaspoon

  • Onion roughly chopped 1 medium

  • Sugar 1 tablespoon

  • White wine 1 tablespoon

  • Turmeric powder a pinch

  • Red chillies crushed 1/2 teaspoon

  • Red chilli powder 1/4 teaspoon

  • Lettuce leaves hand torn 5-6


Step 1

Preheat oven to 180°C or 375°F. Rub in a little salt and freshly crushed black peppercorns on the rack of lamb.

Step 2

Place it in an ovenproof dish and dribble two tablespoons olive oil over it. Place the dish in the oven and let it cook for around forty-five minutes to one hour.

Step 3

Meanwhile prepare the apple sauce. Heat the remaining oil in a pan. Add cumin seeds. When they begin to change colour, add onions and sauté till light brown.Add green apples and sugar.

Step 4

Let the sugar caramalize a bit then add white wine and mix. Cook till apples are cooked and tender.Add salt and a pinch of turmeric powder. Mix and add crushed red chillies and red chilli powder. Cook till apples are completely soft.

Step 5

Set aside to cool. Blend it in a blender and strain. Take the strained mixture in a pan and heat till it comes to a boil.

Step 6

Remove the cooked rack of lamb and place it in a serving plate.

Step 7

Pour the apple sauce over and serve garnished with lettuce leaves torn with hand.
