Ingredients list for Rack Of Lamb With Apple Sauce

  • 450 grams Rack of lamb
  • Green apples
  • 1/2 teaspoon Black peppercorns, crushed
  • 3 tablespoons Olive oil
  • a few Lettuce leaves
  • 3 medium Green apples, chopped
  • 1 teaspoon Cumin seeds
  • 1 medium Onion , roughly chopped
  • 1 tablespoon Sugar
  • 1 tablespoon White wine
  • a pinch Turmeric powder
  • 1/2 teaspoon Red chillies, crushed
  • 1/4 teaspoon Red chilli powder
  • 5-6 Lettuce leaves, hand torn

Method

  1. Preheat oven to 180C or 375F. Rub in a little salt and freshly crushed black peppercorns on the rack of lamb.
  2. Place it in an ovenproof dish and dribble two tablespoons olive oil over it.
  3. Place the dish in the oven and let it cook for around forty-five minutes to one hour.

  4. Meanwhile prepare the apple sauce. Heat the remaining oil in a pan. Add cumin seeds.
  5. When they begin to change colour, add onions and sauté till light brown.
  6. Add green apples and sugar. Let the sugar caramalize a bit then add white wine and mix.
  7. Cook till apples are cooked and tender.
  8. Add salt and a pinch of turmeric powder. Mix and add crushed red chillies and red chilli powder.
  9. Cook till apples are completely soft.
  10. Set aside to cool. Blend it in a blender and strain.
  11. Take the strained mixture in a pan and heat till it comes to a boil.
  12. Remove the cooked rack of lamb and place it in a serving plate.
  13. Pour the apple sauce over and serve garnished with lettuce leaves torn with hand.
