Ingredients for Rajgara Atta Aur Sama Ki Idli Recipe

  • Rajgire ka Atta sieved 1 cup

  • Varai 1/2 cup

  • Kootoo ki dal 1/2 cup

  • Buttermilk 6 cups

  • Green chilli paste 1 teaspoon

  • Peppercorns crushed (optional) 1 teaspoon

  • Rock salt (sendha namak) to taste


Step 1

Soak rajgara atta, kuttu ki dal and vari in buttermilk for four to five hours. Add green chillies, crushed pepper and sindha namak to the batter. Mix it well.

Step 2

Boil water in idli steamer, pour one full spoon of rajgara batter in idly stand. Steam it for fifteen minutes. Serve hot.
