Ingredients list for Red Pumpkin Chocolate Fingers
- 300 grams Red Pumpkin peeled and cut into 2 inch fingers
- 2 cups Chocolate roughly chopped
- 1 1/2 cups Sugar
- Cinnamon sticks 2 one-inch
- 2 Star anise
Method
- Heat 1 litre water with sugar in a deep non-stick pan. Add cinnamon sticks and star anise.
- Prick pumpkin fingers, add to the water and cook till soft. Drain and set aside to cool.
- Put chocolate in a bowl and melt in the microwave for 30 seconds.
- Place a butter paper on a tray.
- Dip the pumpkin fingers in the melted chocolate so that they are evenly coated and keep them on the tray.
- Keep the tray in the refrigerator to set for 2-3 minutes. Transfer onto a serving plate and serve.
