By Sanjeev Kapoor 04 Jan 2016 in Recipes Course New Update Main Ingredients Ridge gourd (turai), Cucumbers seeded and cubed Cuisine Maharashtrian Course Main Course Vegetarian Prep Time 11-15 minutes Cook time 16-20 minutes Serve 4 Taste Mild Level of Cooking Moderate Others Veg Ingredients list for Rishi Panchami Bhaji 1 medium Ridge gourd (turai) 2 medium Cucumbers seeded and cubed 150 grams Red pumpkin (bhopla/kaddu) seeded and cubed 1/2 cup Corn kernels 10-12 Ladyfingers (bhindi) trimmed and chopped 5-6 Green chillies slit 1/2 cup Fresh coriander leaves chopped 3 tablespoons Oil to taste Salt 3/4 cup Coconut scraped For tempering 1 teaspoon Cumin seeds 1 tablespoon Pure ghee Method Heat a pan and add all the prepared vegetables including the cooked corn kernels, slit green chillies, salt, chopped coriander leaves and scraped coconut. Add sufficient water to cover the vegetables. Bring it to a boil. Reduce heat, cover and simmer for eight to ten minutes or till vegetables are well cooked. Heat pure ghee in a tempering pan, add cumin seeds and when it starts to change colour, temper the vegetables.
