Risotto Verde Vegetable risotto with lovely greens This recipe is from FoodFood TV channel By Sanjeev Kapoor 02 Nov 2015 in Recipes Course New Update Main Ingredients Arborio rice , Spinach leaves (palak) Cuisine Italian Course Rice Prep Time 11-15 minutes Cook time 21-25 minutes Serve Taste Mild Level of Cooking Moderate Others Veg Advertisment Ingredients list for Risotto Verde 1 cup Arborio rice 2 cups Spinach leaves (palak) roughly chopped 7-8 large Garlic finely chopped 4 Spring onion bulbs chopped 1 Leek chopped 1 cup White wine 2 1/2 cups Vegetable stock to taste Salt to taste Black pepper powder 4 teaspoons Parsley chopped 4 teaspoons Basil leaves chopped 2 tablespoons Extra virgin olive oil 1 small Broccoli separated into florets 5 tablespoons Yogurt whisked Method Advertisment Heat oil in non stick pan, add garlic and sauté till light brown. Add spring onions, leek and rice, mix well and sauté for 3-4 minutes. Add ½ cup wine and stir to mix. Cook for 2 minutes and add remaining wine. Stir and cook for another 2 minutes. Add spinach and mix well. Add remaining vegetable stock and cook for 3-4 minutes. Add broccoli florets and yogurt. Mix well and cook till fully done. Serve hot.
