History of Indian cuisine dates back to nearly 5,000-years ago when various groups and cultures interacted with India that led to a diversity of flavours and regional cuisines.
Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Rose Kulfi with Faluda Recipe

  • Falooda 1 cup

  • Rose syrup 6 tablespoons

  • Gulkand 1 tablespoon

  • Reduced milk 1 litre

  • Condensed milk 1 cup

  • Rose petals 2 tablespoons

  • Cornflour/ corn starch 1 tablespoon

  • Almonds chopped 1/4 cup

Method

Step 1

Heat reduced milk in a non stick pan, add condensed milk, mix well and simmer for 5-6 minutes.

Step 2

Mix cornflour with 3-4 tbsps water in a bowl and add to the pan. Lower heat and cook till thick.

Step 3

Switch off heat and add 2 tbsps rose petals, gulkand, 3 tbsps rose syrup and mix well. Add almonds and mix again. Pour into kulfi moulds, screw on the covers and keep them in a refrigerator to set.

Step 4

Place falooda in a bowl, add remaining rose syrup and rose petals. Mix well and chill in the refrigerator.

Step 5

When set, demould kulfis, slice them and place in serving bowls. Pour falooda mixture over them and serve chilled.
