Some say Chinese cuisine is 400,000 years old going back to the Peking Man and his use of fire. Some other accounts of the history of Chinese cuisine takes the beginning to the Chinese stone age. However today Chinese cuisine enjoys the distinction of being the most popular in the world.
All this furore about Chinese food can make one wonder what is so special about this cuisine.  To put it in one word it is wholesome.  It has the characteristics of being nutritious, economical, balanced and delicious. It cannot be gainsaid that Chinese food is popular the world over and it can be adapted into our modern lifestyles as the strong link between diet and health of body, mind and spirit is epitomized in Chinese cookery. We all desire harmony in our lives and this works on the ancient Taoist principle of Yin and Yang in which balance and contrast are the key. Each Chinese dish reflects a balance of taste, texture, aroma and colour. Be it sweet, sour, pungent, hot, salty or spicy – all the six basic flavours are incorporated deftly in all Chinese dishes.

Ingredients for Saucy Paneer Recipe

  • Paneer cut into 1 inch cubes 250 grams

  • Oil 3 tablespoons

  • Large Onion cut into 1-inch cubes 1

  • Broccoli separated into florets 1 small

  • Garlic cloves crushed and chopped 5-6

  • Green chillies finely chopped 2

  • Soy sauce 1 tablespoon

  • Chilli garlic sauce 1 tablespoon

  • Tomato ketchup 1 tablespoon

  • Salt to taste

  • Black pepper powder 1/2 teaspoon

Method

Step 1

Heat one and a half tablespoons oil in a non-stick wok, add onion and cook till soft.Add broccoli and sauté for two minutes.

Step 2

Add cottage cheese cubes and sauté for a minute. Transfer this mixture into a bowl and set aside. 

Step 3

Heat the remaining oil in a non-stick wok add garlic, green chillies, soy sauce, chilli-garlic sauce, tomato ketchup and mix.

Step 4

Cook for a few seconds. Add the sautéed vegetables-cottage cheese and toss gently.

Step 5

Add salt and black pepper powder. Cook for two to three minutes on low heat, sprinkling water if necessary.

Step 6

Cook till the sauce coats the cottage cheese and the vegetables. Serve hot
