Be a kid or a teenage or an adult or an oldie, chicken lovers trend all over the world at all times! One meat that is a favourite of all beyond belief! When cooked, it can be presented in many guises. Sauté it, fry it, toss it, bake it, steam it – eat it the way you want to. Whatever its form may be upon being cooked, its flavour may change but its flesh remains high in protein, low in fat and can be digested easily.

Ingredients for Seared Chicken And Three Mushrooms Sauce Recipe

  • Chicken Breast 250 grams

  • Porcini Mushroom soaked 50 grams

  • Morel mushrooms soaked 50 grams

  • Button mushrooms finely sliced 250 grams

  • Salt to taste

  • Crushed black peppercorns to taste

  • Olive oil 4 tablespoons

  • Butter 200 grams

  • Garlic cloves 6-8

  • Rosemary 1 sprigs

  • Onions, finely sliced 2 medium

  • Parmesan cheese 50 grams

  • Double cream 60 millilitres


Step 1

Mix chicken breasts with salt, crushed peppercorns, 2 tbsps olive oil and keep in the refrigerator to marinate for some time.

Step 2

Melt butter in a non stick pan, add garlic, rosemary sprig and sauté. Add onions and saute.

Step 3

Strain the water in which porcini mushrooms and morel mushrooms have been soaked and add to the pan.

Step 4

Mix well. Add porcini mushrooms, morel mushrooms, salt, button mushrooms and mix.

Step 5

Remove the marinated chicken from the refrigerator. Grate parmesan cheese.

Step 6

Heat remaining olive oil in another non stick pan. Add chicken breasts, cover and cook on low heat.

Step 7

Add double cream and parmesan cheese to the mushroom mixture and mix.

Step 8

Add the cooked chicken to the sauce and mix well so that the sauce coats the chicken completely.

Step 9

Cover and cook on low heat for 5 minutes. Serve hot.
