Ingredients list for Seared Chicken And Three Mushrooms Sauce
- 250 grams Chicken Breast
- 50 grams Porcini Mushroom soaked
- 50 grams Morel mushrooms soaked
- 250 grams Button mushrooms finely sliced
- to taste Salt
- to taste Crushed black peppercorns
- 4 tablespoons Olive oil
- 200 grams Butter
- 6-8 Garlic cloves
- 1 sprigs Rosemary
- 2 medium Onions, finely sliced
- 50 grams Parmesan cheese
- 60 millilitres Double cream
Method
- Mix chicken breasts with salt, crushed peppercorns, 2 tbsps olive oil and keep in the refrigerator to marinate for some time.
- Melt butter in a non stick pan, add garlic, rosemary sprig and sauté. Add onions and saute.
- Strain the water in which porcini mushrooms and morel mushrooms have been soaked and add to the pan.
- Mix well. Add porcini mushrooms, morel mushrooms, salt, button mushrooms and mix.
- Remove the marinated chicken from the refrigerator. Grate parmesan cheese.
- Heat remaining olive oil in another non stick pan. Add chicken breasts, cover and cook on low heat.
- Add double cream and parmesan cheese to the mushroom mixture and mix.
- Add the cooked chicken to the sauce and mix well so that the sauce coats the chicken completely.
- Cover and cook on low heat for 5 minutes. Serve hot.
