Ingredients list for Seared Chicken And Three Mushrooms Sauce

  • 250 grams Chicken Breast
  • 50 grams Porcini Mushroom soaked
  • 50 grams Morel mushrooms soaked
  • 250 grams Button mushrooms finely sliced
  • to taste Salt
  • to taste Crushed black peppercorns
  • 4 tablespoons Olive oil
  • 200 grams Butter
  • 6-8 Garlic cloves
  • 1 sprigs Rosemary
  • 2 medium Onions, finely sliced
  • 50 grams Parmesan cheese
  • 60 millilitres Double cream

Method

  1. Mix chicken breasts with salt, crushed peppercorns, 2 tbsps olive oil and keep in the refrigerator to marinate for some time.
  2. Melt butter in a non stick pan, add garlic, rosemary sprig and sauté. Add onions and saute.
  3. Strain the water in which porcini mushrooms and morel mushrooms have been soaked and add to the pan.
  4. Mix well. Add porcini mushrooms, morel mushrooms, salt, button mushrooms and mix.
  5. Remove the marinated chicken from the refrigerator. Grate parmesan cheese.
  6. Heat remaining olive oil in another non stick pan. Add chicken breasts, cover and cook on low heat.
  7. Add double cream and parmesan cheese to the mushroom mixture and mix.
  8. Add the cooked chicken to the sauce and mix well so that the sauce coats the chicken completely.
  9. Cover and cook on low heat for 5 minutes. Serve hot.
