History of Indian cuisine dates back to nearly 5,000-years ago when various groups and cultures interacted with India that led to a diversity of flavours and regional cuisines.
Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Sevian Recipe

  • Vermicelli 100 grams

  • Milk 5 cups

  • Pure ghee 3 tablespoons

  • Sugar 1 cup

  • Saffron (kesar) a few strands

  • Almonds 8-10

  • Pistachios 8-10

  • Green cardamom powder 1/4 teaspoon

  • Silver warq optional 1 sheet

Method

Step 1

Boil the milk till it is reduced to half. Take out one-fourth cup of milk and dissolve saffron in it. Add sugar to the remaining milk and cook till the sugar is dissolved. Remove and keep aside.

Step 2

Blanch almonds and pistachio, remove peel and cut into slivers. Heat ghee in a pan and roast the sevian till lightly browned. Add reduced sweetened milk and bring to a boil.

Step 3

Lower the heat and cook for three to five minutes. Add dissolved saffron, almond and pistachio slivers and mix. Add cardamom powder and mix. Finish with chandi ka varq and serve.
