Ever imagined what life would be without some meetha? The gulab jamuns, barfis, pedas, laddoos, modaks, halwas…you can say let the sugar substitutes rule but not everything is possible with substitutes! One of oldest flavourings and condiments used by mankind, this ingredient is an instant provider of energy. Also available in various types, sugar is either derived from sugarcane or beetroot.

Cook time : 6-10 minutes

Ingredients for Sheer Payara Recipe

  • Sugar 1 cup

  • Milk powder 1 1/2 cups

  • Butter to grease

  • Rose water 1 tablespoon

  • Green cardamom powder 1 teaspoon

  • Walnuts and almonds , chopped 1/4 cup

  • Pistachios , chopped to garnish

  • Sultanas , chopped 1 tablespoon


Step 1

Grease a burfi tray with ghee, line with butter paper.

Step 2

Heat a deep-pan, add sugar and water and bring the mixture to a boil. Simmer, stirring continuously, till the syrup reaches one string consistency.

Step 3

Remove the pan from heat and add rose water, green cardamom powder, walnuts, almonds and milk powder and mix well.

Step 4

Pour the mixture into the greased tray and spread evenly. Sprinkle pistachios and sultanas and set aside to cool for about an hour.

Step 5

When the fudge cools, cut into pieces of your preferred shape, remove from tray and serve.
