During the 18th and 19th centuries, the Americans developed a number of new foods.  What characterised the American cuisine is the adaptation of a fusion of multiple ethnic cooking styles. During this period food production and presentation became more industrialised.

Ingredients for Shrewsbury Biscuits Recipe

  • Butter 125 grams

  • Castor Sugar 3/4 cup

  • Egg yolks 2

  • Refined flour (maida) 1 1/2 cups

  • Lemon rind grated 1

Method

Step 1

Preheat oven to 180°C/350°F/Gas Mark 4. Grease two large baking trays. Cream butter and sugar until light and fluffy. Add egg yolks and beat well. Stir in flour and grated lemon rind and mix to a fairly firm dough.

Step 2

Turn out the dough onto a lightly floured surface and knead lightly to get a smooth dough. Roll it out to one-eighth inch thickness. Using a six-centimeter diameter round cookie cutter cut into rounds.

Step 3

Place these rounds on the greased baking trays keeping sufficient distance between each. Bake in the preheated oven for about fifteen minutes or until the biscuits are firm and a very light brown. Turn them over onto a wire rack to cool completely before storing in an airtight tin.
