Soak them in a in a little water in a bowl. Squeeze the bread and set aside. Process almonds and garlic in a food processor until finely chopped. Add the squeezed bread and process until well blended. With the motor running slowly gradually add the olive oil to form a thick paste. Add the vinegar and process again. Season with salt and crushed peppercorns to taste. Transfer into a bowl and chill. Serve garnished with coriander leaves and parsley sprigs.
