Southern Italian Vegetable Soup Assorted vegetable and macaroni soup- Italian style By Sanjeev Kapoor 01 Jun 2016 in Recipes Course New Update Main Ingredients Tomatoes , Carrots Cuisine Italian Course Soups Prep Time 11-15 minutes Cook time 16-20 minutes Serve 4 Taste Mild Level of Cooking Moderate Others Veg Ingredients list for Southern Italian Vegetable Soup 2 medium Tomatoes 1 medium Carrots finely chopped 2 medium Potatoes finely chopped 1/4 small Cabbage chopped 6-8 Basil leaves 1 teaspoon Olive oil 1 medium Onion finely chopped 4 cloves Garlic finely chopped 1 inch stick Celery chopped to taste Salt to taste White pepper powder 1/4 cup Macaroni 4 cups Vegetable stock Method Remove the eye of tomatoes and make a small incision at the bottom. Boil one cup of water and blanch tomatoes for one minute and remove immediately. Peel, remove the seeds and puree or mince them. Reserve a few basil leaves for garnish and chop the rest. Heat olive oil in a pan, add onion and garlic and sauté till they turn translucent. Add celery, carrot and potatoes. Stir continuously and cook for five minutes. Add cabbage, tomatoes and cook stirring continuously. Add salt, white pepper powder, chopped basil and macaroni, stir and add vegetable stock or water and bring it to a boil. Lower the heat and simmer till vegetables are cooked and the soup has thickened. Garnish with the reserved basil and serve hot. Chef's Tip Basil is known to emit ozone rather than oxygen that is emitted by other plants.
