With the recognition of being an important commercial pulse of the world, soya beans are coming into many kitchens around the world. Soya beans are said to control blood sugar levels, lower cholesterol, regulate the bowels and relieve constipation. Besides the popular tofu or beancurd, the beans are also fermented and used to make flavouring pastes and condiments, notably the Japanese soy sauce or shoyu and miso and the Indonesian tempeh.

Ingredients for Soya Delight Recipe

  • Soya Granules 500 grams

  • Tomato Puree 2 medium

  • Potatoes, peeled 2-3 medium

  • Oil 2 tablespoons

  • Butter 1 tablespoon

  • Salt to taste

  • Red chilli powder 1 teaspoon

  • Black peppercorns, crushed 1/4 teaspoon

  • Tomato puree 1 cup

  • Coriander powder 1/4 teaspoon

  • Ginger-garlic paste 1 tablespoon

  • Cumin powder 1/4 teaspoon

  • Fresh coriander leaves, chopped 1 tablespoon

  • Green chilli, chopped 2-3

Method

Step 1

Slice onions. Slice potatoes and soak them in a bowl of water.

Step 2

Lightly coat the sides of a microwave safe bowl with a little oil and butter.

Step 3

Arrange the potatoes and onions, sprinkle salt, ½ tsp red chilli powder and crushed black peppercorns on top.

Step 4

Place soya granules over the mixture and spread evenly. Pour tomato puree on top of the mixture.

Step 5

Sprinkle some of the remaining red chilli powder, coriander powder, ginger-garlic paste, remaining oil and butter, cumin powder, coriander leaves and repeat all the above once.

Step 6

Add green chillies to it. Cover the bowl with cling film, make a few holes with a sharp knife and keep it in a microwave.

Step 7

Cook for 15-18 minutes. Remove from the microwave, mix everything lightly and serve hot.
