Ingredients list for Spanish Chicken Croquetas

  • 4-5 Chicken sausages
  • ½ cup Butter
  • ½ cup Refined flour (maida)
  • 750 millilitres Milk
  • a pinch Nutmeg powder
  • 2 Eggs
  • for coatin Breadcrumbs
  • to deep fry Oil
  • Rind of 1 lemon
  • to serve Mayonnaise

Method

  1. Heat butter in a nonstick pan, add flour and sauté.
  2. Add milk and stir continuously. Add nutmeg and mix well. Transfer into a bowl and keep in the refrigerator for half an hour.
  3. Roughly chop chicken sausages and add this to the mixture.
  4. Heat sufficient oil in a kadai.
  5. Beat egg in a bowl.
  6. Make a quenelle of the prepared mixture, dip in the egg and coat in breadcrumbs.
  7. Deep-fry in hot oil till golden and crisp on both the sides.
  8. Mix mayonnaise and grate lemon rind
  9. Serve alongwith croquetas.
