Ingredients list for Spanish Chicken Croquetas
- 4-5 Chicken sausages
 - ½ cup Butter
 - ½ cup Refined flour (maida)
 - 750 millilitres Milk
 - a pinch Nutmeg powder
 - 2 Eggs
 - for coatin Breadcrumbs
 - to deep fry Oil
 - Rind of 1 lemon
 - to serve Mayonnaise
 
Method
- Heat butter in a nonstick pan, add flour and sauté.
 - Add milk and stir continuously. Add nutmeg and mix well. Transfer into a bowl and keep in the refrigerator for half an hour.
 - Roughly chop chicken sausages and add this to the mixture.
 - Heat sufficient oil in a kadai.
 - Beat egg in a bowl.
 - Make a quenelle of the prepared mixture, dip in the egg and coat in breadcrumbs.
 - Deep-fry in hot oil till golden and crisp on both the sides.
 - Mix mayonnaise and grate lemon rind
 - Serve alongwith croquetas.
