Spinach Parmesan Muffin A savoury muffin made with spinach and parmesan cheese. This is a Sanjeev Kapoor exclusive recipe. By Sanjeev Kapoor 13 Apr 2016 in Recipes Course New Update Main Ingredients Spinach, Parmesan cheese powder Cuisine Fusion Course Snacks and Starters Prep Time 11-15 minutes Cook time 31-40 minutes Serve 4 Taste Mild Level of Cooking Easy Others Non Veg Ingredients list for Spinach Parmesan Muffin 100 grams Spinach blanched and chopped 1/4 cup Parmesan cheese powder 2 cups Refined flour (maida) 1/2 teaspoon Salt 1 tablespoon Baking powder 1 teaspoon Castor sugar (caster sugar) 1 Egg + 2 tablespoons Milk 1 cup 1/2 cup Oil Method Preheat oven to 180º C. Line a silicon muffin tray with muffin cases. Cream together egg, olive oil and milk in a bowl till light. Sieve together flour, baking powder and salt into the egg mixture. Fold in well. Add spinach, ⅔ of the parmesan cheese powder and castor sugar and mix well. Spoon the mixture into the moulds till ¾ full. Place the tray on a baking tray and place it in the preheated oven and bake for 20-25 minutes. Remove from oven, demould and top with the remaining parmesan cheese powder.
