Ingredients list for Sprouts Pav Bhaji

  • 1 1/2 cups Mixed sprouts (moong, moth, chana)
  • 2 tablespoons Pav bhaji masala
  • 8 Pavs
  • 1 Small cauliflower roughly chopped
  • 1 Medium green capsicum roughly chopped
  • 1/4 cup Green peas
  • 1 tablespoon Oil
  • 4 tablespo for topping Butter
  • 2 + to serve Medium onions finely chopped
  • 2 Green chllies finely chopped
  • 1 tablespoon Ginger-garlic paste
  • 2 Medium tomatoes finely chopped
  • to taste Salt
  • 1 tablespoon Red chilli powder
  • 2 tablespo to garnish Fresh coriander leaves chopped
  • to serve Lemon wedges

Method

  1. Heat oil and 2 tbsps butter in a deep non-stick pan, add onions and saute till translucent.
  2. Add green chillies, ginger-garlic paste, mix well and saute till raw smells disappear. Add tomatoes, mix and saute till they become pulpy.
  3. Add salt and mix well. Add red chilli powder, mix and saute for a minute. Add cauliflower and mix well. Add 2 tbsps butter and mix well.
  4. Add sprouts and mix well. Add green capsicum, green peas, pav bhaji masala, coriander leaves and salt and mix. Add ½ cup water and mix, cover and cook for 3-4 minutes.
  5. Mash the cooked mixture with a masher and mix. Remove the pan from heat and set aside.
  6. Melt some butter on a non-stick tava. Halve each pav horizontally without cutting through and place it on the tava. Press lightly on each side till it turns crisp.
  7. Place the pavs on one side of each serving dish. Place some bhaji on the other side, garnish with coriander leaves and butter, and serve hot onions and lemon wedges.
