Some say Chinese cuisine is 400,000 years old going back to the Peking Man and his use of fire. Some other accounts of the history of Chinese cuisine takes the beginning to the Chinese stone age. However today Chinese cuisine enjoys the distinction of being the most popular in the world.
All this furore about Chinese food can make one wonder what is so special about this cuisine.  To put it in one word it is wholesome.  It has the characteristics of being nutritious, economical, balanced and delicious. It cannot be gainsaid that Chinese food is popular the world over and it can be adapted into our modern lifestyles as the strong link between diet and health of body, mind and spirit is epitomized in Chinese cookery. We all desire harmony in our lives and this works on the ancient Taoist principle of Yin and Yang in which balance and contrast are the key. Each Chinese dish reflects a balance of taste, texture, aroma and colour. Be it sweet, sour, pungent, hot, salty or spicy – all the six basic flavours are incorporated deftly in all Chinese dishes.

Ingredients for Steamed Chicken Buns Recipe

  • Refined flour 3 cups

  • Sugar 3 teaspoons

  • Dry yeast 1 1/2 teaspoons

  • Salt 1 teaspoon

  • Cornflour/ corn starch 2 teaspoons

  • Oil 2 tablespoons

  • Garlic crushed 2 cloves

  • Spring onions chopped 2

  • Green chilli seeded and finely chopped 1

  • Soy sauce 1/2 tablespoon

  • Sugar 1/2 tablespoon

  • Salt to taste


Step 1

Dissolve the sugar in one cup of warm water and sprinkle the dried yeast. Stir and leave for ten minutes or until the mixture is frothy. Sift the flour and salt together in a bowl.

Step 2

Stir in the yeast mixture with half a cup of warm water to make a soft and pliable dough. Knead by hand for about two to three minutes. Cover with a moist cloth and leave in a warm place until it doubles in size. For the filling, clean and wash and pat dry the chicken breasts.

Step 3

Roughly chop into very small cubes. Mix the cornflour in three tablespoons of water and keep aside. Heat the oil in a pan, add the garlic, spring onions and stir fry for half a minute. Add the chicken, green chilli, soy sauce, sugar and salt.

Step 4

Stir well over high heat, stir in the cornflour mixture and thicken the chicken mixture. Set aside to cool. Knock back the dough to remove the air bubbles and knead for about a minute. Divide the dough into sixteen portions, flatten each portion a bit.

Step 5

Place a spoonful of the filling in the center of each, gather the sides, seal and roll into a ball. Line the steamer compartment with butter paper and arrange the buns without touching each other. Leave it for fifteen to twenty minutes or until the buns double in size. Cover and steam over gently simmering water for fifteen minutes or until cooked. Serve immediately.
