Ingredients list for Strawberry Coconut Bars
- 1 1/4 cups Refined Flour
- 1/2 teaspoon Dessicated Coconut
- 1 teaspoon Baking powder
- 1 teaspoon + 1 cup Sugar
- 1/2 cup + 6 tablespoons Butter
- 3 Eggs
- 2 tablespoons Milk
- 1 cup Strawberry jam thick
- 2 teaspoons Vanilla essence
- 2 1/2 cups Sweetened desiccated coconut
Method
- Preheat oven at 180°C. Sift flour, salt and baking powder together. Add one-teaspoon sugar.
- Break eggs and separate one egg yolk. Beat together butter, egg yolk and milk. Fold the flour mixture into it.
- Press the mixture into a greased rectangular pan. Spread strawberry jam over, leaving an edge of about a quarter inch all around pan.
- In a separate bowl beat remaining eggs and one cup of sugar until thick and lemon coloured. Pour in vanilla essence and six tablespoon of melted butter.
- Blend in desiccated coconut. Spread the above mixture evenly over the jam layer. Bake in preheated oven at 180°C for about half an hour, or until the top is golden brown and set.
- Cool and cut into squares and serve.
