Ever wondered why the phrase “say cheese” is used just before a photograph is clicked? Simply because ‘cheese’ makes one smile! Not only the word but cheese as a food makes a lot of palates happy. It is an inexpensive, versatile and nourishing food. We have our very own Indian version as well as the ones made from soy milk that are even healthier. Whichever form, this is one food that is loved by one and all!

Ingredients for Stuffed Cheese Rolls Recipe

  • Mozzarella cheese as required

  • Refined flour (maida) 2 cups + for dusting

  • Fresh yeast 1 tablespoon

  • Sugar 2 teaspoon

  • Butter 1 tablespoon + for greasing

  • Salt a pinch

  • Milk powder ½ cup

  • Parsley sprigs 6-8

  • Garlic cloves 5-6

  • Milk for brushing

Method

Step 1

Put yeast in a small bowl, add some water and 1 teaspoon castor sugar and mix well. Heat in microwave for 10 seconds. Set aside for 1-2 minutes or till the yeast gets activated.

Step 2

Sieve flour into a bowl. Add salt, remaining sugar and milk powder and mix well. Make a well in the centre and add the activated yeast and mix well. Add water gradually and knead into a soft dough.

Step 3

Dust the worktop with some flour, place the dough and stretch.

Step 4

Dust the same bowl with some flour, put the dough into it, cover with damp muslin cloth and set aside to prove for 15-20 minutes.

Step 5

Dust the worktop with some flour, place the dough on it and knock back to remove all the air. Add 1 tablespoon butter and knead again. Put the dough back into the bowl and set aside.

Step 6

Roughly chop parsley. Grate some cheese over it and mix well.

Step 7

Weigh the dough and divide into 8 equal portions.

Step 8

Take each portion in your palms, create a cavity, fill in some cheese-parsley mixture, bring the edges together, seal the edges and shape into a ball. Ensure that the balls are smooth with no cracks on the surface.

Step 9

Grease a baking tray with some butter and dust with some flour.

Step 10

Place the stuffed cheese rolls in the greased tray, cover with damp muslin cloth and set aside to prove for 10-15 minutes.

Step 11

Preheat oven to 180ºC.

Step 12

Finely chop garlic cloves.

Step 13

Brush some milk over the balls and sprinkle chopped garlic. Place the baking tray in the preheated oven and bake for 10-15 minutes.

Step 14

Brush some butter on the cheese rolls and let them cool slightly before serving.
