Ingredients list for Stuffed Eggplant Rings-SK Khazana

  • Large eggplant
  • 2 Medium potatoes boiled, peeled and grated
  • 1/2 cup Processed cheese grated
  • 1/2 cup Cheddar cheese grated
  • 1 teaspoon Red chilli flakes
  • to taste Salt
  • for greasi Oil
  • to sprinkle Panko crumbs

Method

  1. Preheat oven to 180º C.
  2. Place a small cookie cutter in the centre of each slice and cut out a circular slice to get a doughnut shaped slice.
  3. Put the cut out slices in a bowl and mash well.Add potatoes, processed cheese, cheddar cheese, chilli flakes and salt and mix well.
  4. Grease a baking tray with some oil and place the hollowed eggplant slices on it.
  5. Stuff the centre portions of each slice with potato mixture, brush some oil and sprinkle some panko crumbs on top.
  6. Put tray in preheated oven and bake for 15-20 minutes or till the crust turns golden brown.
  7. Serve hot.
