Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Stuffed Papad Recipe

  • Papads 8

  • Potatoes 2 tablespoons

  • Ginger chopped 2 teaspoons

  • Green chillies chopped 3

  • Potatoes boiled, peeled and mashed 3-4 medium

  • Salt to taste

  • Chaat masala 1 teaspoon

  • Red chilli powder 1/2 teaspoon

  • Fresh coriander leaves chopped 2 tablespoons

  • Roasted cumin powder 1/2 teaspoon

Method

Step 1

Heat 2 tbsps oil in a non stick pan, add ginger and green chillies and saute till fragrant. Add it to the mashed potatoes. Heat sufficient oil in a another pan.

Step 2

Add salt, chaat masala, red chilli powder, coriander leaves and roasted cumin powder to the potatoes and mix well.

Step 3

Dampen the papads slightly on both sides. Place a little potato mixture at one end of each papad and roll. Press the two ends to seal.

Step 4

Deep fry in hot oil till crisp and golden. Drain on absorbent paper. Arrange on a serving plate and serve immediately.
