Ingredients list for Sweetcorn Chowder

  • 1/2 cup Sweet corn
  • 2 tablespoons Olive oil
  • 1 medium Onion
  • 2 inch stalk Celery chopped
  • 1 packet Vegetable soup
  • 3 cups Vegetable stock
  • to taste Salt
  • 8-10 Black peppercorns crushed
  • 1/4 cup Corn kernels
  • a little Green capsicum finely chopped
  • as required Lemon
  • 1 cup Milk

Method

  1. Heat 2 tbsps olive oil in a non stick pan. Chop onion and add along with celery and saute.Add cream style sweet corn and mix.
  2. Put the soup packet contents into a bowl, add vegetable stock and mix well.Add this to the pan and mix. Add salt and crushed peppercorns and mix.
  3. Put some corn kernels in a soup bowl followed by green capsicum. Grate a little lemon rind over the soup and mix. Add milk and mix and cook till thick.
  4. Transfer into a sauce boat and pour over the garnish kept in the soup bowl. Serve piping hot.
