Ingredients 

  • 3-4 large potatoes
  • 1 tablespoon Thai red curry paste
  • 1 tablespoon red chilli paste
  • Salt to taste
  • 3-4 tablespoons coconut milk
  • 1 lemon
  • 2-3 teaspoons honey
  • Lemon juice to drizzle

Method

  1. Cut potatoes into wedges without peeling.
  2. Put Thai red curry paste, red chilli paste, salt and coconut milk in a bowl and mix well. Grate some zest of lemon into the bowl. Add potato wedges and mix till the potatoes are well coated.
  3. Add honey and mix well. Place these wedges in a single file in the air fryer basket and fry at 200ºC for 5 minutes, then reduce the temperature to 180ºC and fry for 5 minutes more.
  4. Transfer onto a serving plate, drizzle a little lemon juice, and serve hot.
