Karnataka cuisine comprises of many vegetarian and non-vegetarian dishes that are full of flavour and taste. It is one of the oldest surviving cuisines and its origins can be traced back to the Iron Age. 
The varieties in Karnataka cuisine have influenced the neighbouring states like Tamil Nadu, Andhra Pradesh, Kerala and Maharashtra. The cuisine also reflects influences from these four neighbouring states on its food habits. 
Being a coastal state, coconut is grown in abundance. Needless to say coconut in its various forms like oil, milk, fresh and dried coconut is put to excellent use in its cuisine.

Ingredients for Thirattupal Recipe

  • Milk 8-10 cups

  • Green cardomom 4

  • Sugar 1/2 cup

  • Jaggery (gur) 1/2 cup

  • Edible camphor optional 1 a pinch

Method

Step 1

Boil milk in a wide and shallow kadai. Reduce heat and continue to simmer. Grind cardamom with one tablespoon sugar to a fine powder.

Step 2

Keep skimming the sheet of cream that forms on the surface of the simmering milk and reserve in a bowl. When the milk has reduced to half the original quantity, add sugar and cardamom powder. Continue simmering to reduce the milk further, stirring continuously with a spatula.

Step 3

As the milk starts solidifying, add the skimmed cream and jaggery. Stir and continue cooking till it melts and combines well. Sprinkle camphor powder, mix well and serve. You can also store this in a sterilized bottle for a few days.
