Ingredients list for Tomato and Olive Rice

  • 1 1/2 cups Basmati rice soaked for 1 hour
  • 10-12 Olive oil
  • 1 bottle Black olives sliced
  • 1 bottle Green olives sliced
  • 2 tablespoons Extra virgin olive oil
  • 1 teaspoon Garlic chopped
  • 2 medium Onions sliced
  • 7-8 Black peppercorns
  • to taste Crushed black peppercorns
  • 2 cups Vegetable stock
  • 1 cup Tomato puree
  • to taste Salt
  • 20-25 Fresh basil leaves

Method

  1. Set a rice cooker on cook mode and heat extra virgin olive oil in it. Add garlic, onions, cherry tomatoes, black peppercorns, crushed black peppercorns and mix well. Saute for 2-3 minutes.
  2. Drain and add black and green olives and mix well. Drain and add rice, vegetable stock, tomato puree and mix well. Add salt and mix well.
  3. Roughly tear basil leaves and add. Mix well, cover and cook till rice is done. Serve hot.
