How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Ingredients for Tomato and Olive Rice Recipe

  • Basmati rice soaked for 1 hour 1 1/2 cups

  • Olive oil 10-12

  • Black olives sliced 1 bottle

  • Green olives sliced 1 bottle

  • Extra virgin olive oil 2 tablespoons

  • Garlic chopped 1 teaspoon

  • Onions sliced 2 medium

  • Black peppercorns 7-8

  • Crushed black peppercorns to taste

  • Vegetable stock 2 cups

  • Tomato puree 1 cup

  • Salt to taste

  • Fresh basil leaves 20-25


Step 1

Set a rice cooker on cook mode and heat extra virgin olive oil in it. Add garlic, onions, cherry tomatoes, black peppercorns, crushed black peppercorns and mix well. Saute for 2-3 minutes.

Step 2

Drain and add black and green olives and mix well. Drain and add rice, vegetable stock, tomato puree and mix well. Add salt and mix well.

Step 3

Roughly tear basil leaves and add. Mix well, cover and cook till rice is done. Serve hot.
