Karnataka cuisine comprises of many vegetarian and non-vegetarian dishes that are full of flavour and taste. It is one of the oldest surviving cuisines and its origins can be traced back to the Iron Age. 
The varieties in Karnataka cuisine have influenced the neighbouring states like Tamil Nadu, Andhra Pradesh, Kerala and Maharashtra. The cuisine also reflects influences from these four neighbouring states on its food habits. 
Being a coastal state, coconut is grown in abundance. Needless to say coconut in its various forms like oil, milk, fresh and dried coconut is put to excellent use in its cuisine.

Ingredients for Varikka Pradhaman Recipe

  • Jackfruit 20 segment

  • Green Cardomom 4

  • Sugar 1 tablespoon

  • Pure ghee 1/4 cup

  • Cashewnuts 12

  • Coconut,scraped 1 cup

  • Jaggery (gur) grated 1 cup

  • Dry ginger powder (soonth) 1/2 teaspoon

Method

Step 1

Select ripe segments of jackfruit. Deseed and chop them to small dices. Grind cardamom with sugar to a fine powder, sieve and keep aside. Heat two tablespoons ghee and fry cashewnuts till light brown.

Step 2

Soak coconut in half a cup of warm water, grind and extract thick milk. Repeat the process but with one cup of warm water and make a second extract and keep aside. Heat the remaining ghee and sauté the jackfruit for two to three minutes.

Step 3

Add jaggery and second extract of coconut milk. Cook till jaggery combines and thickens well. Sprinkle cardamom powder and ginger powder. Add the first extract of coconut milk and heat through, stirring well. Serve at room temperature, garnished with fried cashewnuts.
