Ingredients list for Varikka Pradhaman

  • 20 segment Jackfruit
  • 4 Green Cardomom
  • 1 tablespoon Sugar
  • 1/4 cup Pure ghee
  • 12 Cashewnuts
  • 1 cup Coconut,scraped
  • 1 cup Jaggery (gur) grated
  • 1/2 teaspoon Dry ginger powder (soonth)

Method

  1. Select ripe segments of jackfruit. Deseed and chop them to small dices. Grind cardamom with sugar to a fine powder, sieve and keep aside. Heat two tablespoons ghee and fry cashewnuts till light brown.
  2. Soak coconut in half a cup of warm water, grind and extract thick milk. Repeat the process but with one cup of warm water and make a second extract and keep aside. Heat the remaining ghee and sauté the jackfruit for two to three minutes.
  3. Add jaggery and second extract of coconut milk. Cook till jaggery combines and thickens well. Sprinkle cardamom powder and ginger powder. Add the first extract of coconut milk and heat through, stirring well. Serve at room temperature, garnished with fried cashewnuts.
