Ingredients for Veg Clear Soup - SK Khazana Recipe

  • Kidney beans soaked for 3-4 hours and pressure cooked 1/2 cup

  • Oil 1 tablespoon

  • Green chillies chopped 1-2

  • Babycorns finely chopped 4-5

  • Broccoli finely chopped 4-5 florets

  • Yellow Zucchini finely chopped 1/2 small

  • Green zucchini finely chopped 1/2 small

  • Sweet corn kernels boiled 2 tablespoons

  • Salt to taste

  • Crushed black peppercorns to taste

  • Cornflour Slurry 3-4 tablespoons

  • Tofu finely chopped 2 1/2 tablespoons

  • Lemon juice 3 teaspoons

  • coriander leaves chopped 1 tablespoon

  • Bread Sticks to serve


Step 1

Heat oil in a deep non-stick pan, add green chillies, baby corn, broccoli, yellow zucchini, green zucchini and sweet corn, mix and sauté for 1 minute.

Step 2

Add 3 cups of water and mix well. Add salt and crushed black peppercorns, mix well and let mixture come to a boil.

Step 3

Add cornflour slurry and mix well. Add boiled rajma and tofu and mix well. Cook till the mixture comes to a boil. Add lemon juice and mix well. Switch the heat off.

Step 4

Add coriander leaves and mix well.

Step 5

Transfer into a serving bowl and serve hot with bread sticks.
