Ingredients

  • 7-8 cauliflower florets, finely chopped
  • 3-4 babycorn, finely chopped
  • 1 medium carrot, peeled and finely chopped
  • 3-4 french beans stringed and finely chopped
  • 3-4 potatoes boiled, peeled and mashed
  • 5-6 tablespoons pesto sauce
  • Oil for deep-frying 
  • 3-4 tablespoons refined flour (maida)
  • Salt to taste
  • Black pepper powder,

Method

  1. Heat sufficient oil in a pan.
  2. Put cauliflower, babycorn, carrot and French beans in a bowl and mix. Add potatoes, refined flour, salt and pepper powder and mix well. Add pesto sauce and mix again.
  3. Divide the mixture into equal portions, flatten and make a dent in the centre. Deep-fry the rings in the hot oil till golden and crisp. Drain on absorbent paper.
  4. Serve hot.
