Vengaya Kosu

Ingredient                     

  • 3 medium onions, thinly sliced                
  • ½ kg.tomatoes, chopped                
  • 4 potatoes, peeled and cubed             
  • 10 whole red chillies                
  • ¼ cup scraped fresh coconut              
  • ¼ teaspoon fennel seeds                     
  • 1 teaspoon cumin seeds                     
  • 1 tablespoon poppy seeds                     
  • 2 tablespoons split skinless black gram (urad dal)             
  • 2 tablespoons oil                         .
  • Salt to taste                        
  • 2 tablespoons chopped coriander leaves         

Method 

  1. Dry roast and grind the red chillies, scraped coconut, aniseeds, cumin seeds, poppy seeds and black gram to a fine paste.
  2. Heat oil in a kadhai and fry onions till crisp. 
  3. Add chopped tomatoes, potatoes and fry for few minutes. 
  4. Add ground paste with salt, stir for few minutes. 
  5. Pour just enough water, close with lid and cook on low heat.  
  6. When potatoes are cooked properly, remove from heat. 
  7. Garnish with coriander leaves.
