Also called by names like aubergine and eggplant, this purple hued fleshy vegetable is a versatile thing and fun to cook with. Dish-up a very traditional bharta with it, bake a lasagna with parmesan and eggplant or just fry it for a great accompaniment with dal-chawal, brinjal is versatile. To choose one without seeds, pick the lighter one with a smooth shiny skin.

Ingredients for Vengna Na Bhajiya Recipe

  • Brinjals 2 medium

  • Lemon juice 1 tablespoon

  • Red chilli powder 1 teaspoon

  • Turmeric powder 1 teaspoon

  • Cumin powder coarsely ground 1 teaspoon

  • Ginger-garlic paste 1 teaspoon

  • Black pepper powder freshly ground 1/4 teaspoon

  • Salt to taste

  • Oil to deep fry

  • FOR BATTER

  • Gram flour (besan) 1 1/2 cups

  • Baking powder 1/2 teaspoon

  • Fresh coriander leaves chopped 1 tablespoon

  • Salt to taste

Method

Step 1

Slice brinjals into half inch thick slices. Marinate them with lemon juice, red chilli powder, turmeric powder, cumin powder, ginger-garlic paste, salt and pepper powder. Mix besan, baking powder, coriander leaves and salt. Add sufficient water to make a smooth batter of coating consistency.
