Watermelon and Fresh Mozarella Salad

Ingredients 

  • 1 small watermelon, quartered, peeled, seeded and cut into cubes
  • 8-12 mozzarella cheese balls
  • ½ cup balsamic vinegar
  • 1 tablespoon castor sugar (caster sugar)
  • 8-12 fresh basil leaves + as required 
  • Mixed beetroot and sunflower micro greens as required

Method

  1. Heat balsamic vinegar in a non-stick pan. Add castor sugar, swirl and cook till the mixture reduces slightly.
  2. Place one cheese ball on each basil leaf and insert in a plastic skewer along with a watermelon cube.
  3. Place some mixed micro greens on a serving platter and place skewered cheese balls-watermelon on one side.
  4. Drizzle some balsamic reduction over the skewers and micro greens and serve immediately.
