Ingredients
- 1 small watermelon, quartered, peeled, seeded and cut into cubes
- 8-12 mozzarella cheese balls
- ½ cup balsamic vinegar
- 1 tablespoon castor sugar (caster sugar)
- 8-12 fresh basil leaves + as required
- Mixed beetroot and sunflower micro greens as required
Method
- Heat balsamic vinegar in a non-stick pan. Add castor sugar, swirl and cook till the mixture reduces slightly.
- Place one cheese ball on each basil leaf and insert in a plastic skewer along with a watermelon cube.
- Place some mixed micro greens on a serving platter and place skewered cheese balls-watermelon on one side.
- Drizzle some balsamic reduction over the skewers and micro greens and serve immediately.
