By Sanjeev Kapoor 24 Nov 2014 in Recipes Course New Update Main Ingredients Zucchini, Olive oil Cuisine Italian Course Snacks and Starters Prep Time 16-20 minutes Cook time 11-15 minutes Serve Taste Mild Level of Cooking Moderate Others Veg Ingredients list for Zucchini Alla Scapece 2 medium Zucchini cut into round slices Olive oil shallow fry 2 large Garlic chopped 1 tablespoon Mint leaves chopped to taste Salt 1/4 teaspoon Black pepper powder 1/4 cup Balsamic vinegar sprigs Mint leaves Method Heat the olive oil in a pan and shallow-fry the zucchini; drain on absorbent paper and set aside to cool. Arrange the zucchini rounds in a serving platter and sprinkle with garlic, mint, salt and pepper powder. Drizzle the balsamic vinegar over the salad and leave to marinate for at least half an hour.
