Ingredients list for Zucchini Alla Scapece
- 2 medium Zucchini cut into round slices
- Olive oil shallow fry
- 2 large Garlic chopped
- 1 tablespoon Mint leaves chopped
- to taste Salt
- 1/4 teaspoon Black pepper powder
- 1/4 cup Balsamic vinegar
- sprigs Mint leaves
Method
- Heat the olive oil in a pan and shallow-fry the zucchini; drain on absorbent paper and set aside to cool.
- Arrange the zucchini rounds in a serving platter and sprinkle with garlic, mint, salt and pepper powder. Drizzle the balsamic vinegar over the salad and leave to marinate for at least half an hour.
- Serve at room temperature or chilled, garnished with a sprig of mint.
