Vratwale Aloo

This scrumptious dish is perfect for your Navratri fasting, blending the goodness of potatoes with cumin seeds and cooked with peanuts. Generally made during a vrat, you can enjoy it on other days too. This is a Sanjeev Kapoor exclusive recipe.

Ingredients 

  • 3-4 medium potatoes, boiled and peeled
  • 2 green chillies
  • 2 tablespoons ghee
  • 1 teaspoon cumin seeds
  • Rock salt (senda namak) to taste
  • 1/2 cup peanuts, roasted and crushed
  • 2 tablespoons scraped fresh coconut  + for garnish  
  • 2 tablespoons chopped fresh coriander leaves  + for garnish 

Method

  1. Cut green chillies into big pieces and potatoes into cubes.
  2. Heat ghee in a non-stick pan. Add cumin seeds and green chillies and sauté till the seeds change colour.
  3. Add potatoes and rock salt and toss well. Add peanuts and mix well.
  4. Cover and cook for 2-3 minutes.
  5. Add coriander leaves and coconut and mix well.
  6. Garnish with coconut and coriander leaves and serve hot with rajgira puri.
