Gram flour burfi further enhanced both in taste and nutrients with the addition of 5 seeds. Ensure that the gram flour is well browned and the seeds properly roasted to give best flavour and taste. Dipping them in melted chocolate makes them more appealing.

Ingredients

  • 1 tablespoon flax seeds (alsi)
  • 1 tablespoon pumpkin seeds
  • 1 tablespoon white sesame seeds
  • 1 tablespoon melon seeds
  • 1 tablespoon black sesame seeds
  • Melted dark chocolate as required
  • Melted milk chocolate as required
  • 2 cups gram flour (besan)
  • ½ cup ghee
  • ¾ cup powdered sugar
  • ½ teaspoon green cardamom powder
  • ¼ teaspoon nutmeg powder

Method  

  1. Heat ghee in a kadai, add gram flour, mix well and saute on low heat, stirring continuously, for 10-15 minutes or till the flour turns golden brown and fragrant.
  2. Transfer sautéed mixture onto a large plate and allow to cool slightly.
  3. Meanwhile, dry roast flax seeds, pumpkin seeds, white sesame seeds, melon seeds and black sesame seeds in a non-stick pan for 2-3 minutes. Take the pan off the heat.
  4. Add powdered sugar, green cardamom powder and nutmeg powder to the gram flour mixture and mix till well combined. Transfer this mixture into a greased burfi tin and spread it evenly. Smoothen the top and sprinkle the roasted seeds and press lightly. Keep it aside till it sets.
  5. Cut the magaz into squares and demould gently. Dip half of half the squares in melted dark chocolate and half of the remaining squares in melted milk chocolate and keep them on a tray to set.  
  6. Arrange the magaz on a serving plate and serve.
