By Sanjeev Kapoor 05 May 2016 in Recipes Course New Update Aam Launji Main Ingredients Raw mangoes, Sugar Cuisine Rajasthani Course Pickles, Jams and Chutneys Prep Time 6-10 minutes Cook time 11-15 minutes Serve 4 Taste Tangy Level of Cooking Moderate Others Veg Ingredients 5 medium raw mangoes Salt to taste 5 tablespoons sugar 1/2 tablespoon turmeric powder 2 tablespoons oil 1/2 teaspoon cumin seeds 1 teaspoon fennel seeds (saunf) 1/2 teaspoon onion seeds (kalonji) A pinch asafoetida Method Peel mangoes, remove seed and cut into half inch pieces. Boil five cups of water in a pan, add salt, turmeric powder, half the sugar, mango pieces and blanch. Heat oil in another pan. Add cumin seeds, fennel seeds, onion seeds and asafoetida. Sauté till a nice aroma is given out. Drain the blanched mango pieces and add to the pan. Add the remaining sugar, adjust salt and mix well. Do not cook for long. Remove from the pan immediately and serve.
