Ingredients 

  • 5 tablespoons coarse gram flour (jada besan)
  • 4 tablespoons oil
  • 1 teaspoon fenugreek seeds (methi dana)
  • 1/2 teaspoon asafoetida (hing)
  • 1 teaspoon mustard seeds
  • 1 teaspoon onion seeds (kalonji)
  • 1 medium onion, finely chopped
  • 3-4 spring onions with bulbs and greens, finely chopped separately
  • 4 medium tomatoes
  • 1 tablespoon ginger-garlic paste
  • Salt to taste
  • 2 teaspoons red chilli powder

Method

  1. Heat oil in a non-stick pan, add fenugreek seeds, asafoetida, mustard seeds and onion seeds and let them splutter. Add onion and spring onion bulbs and sauté till translucent.
  2. Cut tomatoes into big cubes.
  3. Add ginger-garlic paste and mix well.
  4. Add gram flour to the pan and saute for 2-3 minutes. Saute on high heat, stirring continuously, till the gram flour starts to change color and becomes fragrant.
  5. Add tomatoes and mix well. Drizzle 2 tablespoons water in the pan and mix well. Add salt and red chilli powder and mix well. Cover and cook for 10-12 minutes, stirring often.
  6. Add spring onion greens and mix again. Cook further 2-3 minutes.
  7. Serve hot.
