Why is it that when you are stuck at “what should we cook today” the answer is always “make some aloo!” Potatoes are like this…extremely popular and have multipurpose usage.

And did you always think that eating a potato will make you fat?
Well, don’t – it is a surprising source of vitamin C and provides useful amounts of starch, thiamine and niacin and around a hundred grams will provide about eighty calories.

Ingredients for Aloo Bhalle - SK Khazana Recipe

  • Potatoes blanched, peeled and mashed 4 medium

  • Cornflour/ corn starch 2 tablespoons

  • Coriander seeds crushed 1 tablespoon

  • Red chilli powder 1/4 teaspoon

  • Salt to taste

  • Oil for greasing + for shallow frying

  • Green chutney to serve

  • Sweet tamarind chutney to serve

  • Chaat masala powder as required

Method

Step 1

Take mashed potatoes in a bowl, add cornflour, coriander seeds, red chilli powder and salt and mix well. Grease your palms with oil, divide the mixture into 4 equal portions, and shape each of them into a tikki.

Step 2

Heat sufficient oil in a non-stick pan, place the tikkis in it and shallow-fry on medium heat, turning sides and pressing lightly, till evenly golden crisp on both sides. Drain on absorbent paper.

Step 3

Place each bhalla on individual serving plates and crush them lightly. Drizzle green chutney and sweet tamarind chutney and sprinkle chaat masala powder. Serve immediately.
