Meanwhile heat oil for frying the flattened potatoes. Fry the potatoes till crisp and golden brown in colour. Drain on an absorbent paper. Heat one tablespoon oil in a nonstick wok, add garlic and sauté for a minute. Add spring onions, salt, crushed black peppercorns and chilli flakes. Add the fried potatoes and toss everything together to combine well. Serve immediately.
