Also called by names like aubergine and eggplant, this purple hued fleshy vegetable is a versatile thing and fun to cook with. Dish-up a very traditional bharta with it, bake a lasagna with parmesan and eggplant or just fry it for a great accompaniment with dal-chawal, brinjal is versatile. To choose one without seeds, pick the lighter one with a smooth shiny skin.

Ingredients for Baingan Bharta With Soya Granules Recipe

  • Brinjal roasted & peeled with crown intact 1 large

  • Soya granules soaked 1/2 cup

  • Onion 1 medium

  • Oil 2 tablespoons

  • Cumin seeds 1 tablespoon

  • Tomatoes chopped 2-3 medium

  • Salt to taste

  • Red chilli powder teaspoon

Method

Step 1

Chop the onion. Heat oil in a non-stick pan. Remove the crown from the roasted brinjal and finely chop it. Keep aside the crown.

Step 2

Add cumin seeds and chopped onion to the pan. Sauté till onion is light brown.

Step 3

Add tomatoes and mix well. Add salt and mix well. Add the brinjal crown and mix again.Drain the soya granules and add. Mix well.

Step 4

Add chopped roasted brinjal and mix well. Add red chilli powder, mix and cook for 3-4 minutes. Serve hot.
