Hindi: baingan
Also called by names like aubergine and eggplant, this purple hued fleshy vegetable is a versatile thing and fun to cook with. Dish-up a very traditional bharta with it, bake a lasagna with parmesan and eggplant or just fry it for a great accompaniment with dal-chawal, brinjal is versatile. To choose one without seeds, pick the lighter one with a smooth shiny skin.

Ingredients for Baingan Walnut Rolls Recipe

  • Brinjal 4

  • Walnut 1/2 teaspoon

  • Red chilli powder 1 1/2 teaspoons

  • Salt to taste

  • Oil 3 tablespoons

  • Garlic 8 cloves

  • Walnuts 1/4 cup

  • Fresh dill (suva) chopped 3 tablespoons

  • Juice of 1 lemon

Method

Step 1

Slice brinjals into thin vertical slices and keep them in a bowl.

Step 2

Mix turmeric powder, red chilli powder, salt and 2 tbsps oil and coat the brinjal slices with this mixture.

Step 3

To make the stuffing, grind together garlic, walnuts and 1 tbsp suva.

Step 4

Place the marinated brinjals on the griller, pour a little oil and cook, flipping sides, till golden.

Step 5

Heat the remaining oil in a non stick pan. Add the ground masala and a little water and mix well.

Step 6

Add the remaining suva, lemon juice, salt and mix well.Spread the stuffing on the brinjal slices and roll them.

Step 7

Arrange the rolls on a serving plate, garnish with some suva and serve.
