Baked Beans Sandwich

Ingredients list for Baked Beans Sandwich

  • 1½ cups baked beans
  • 12 white bread slices
  • 2 teaspoons oil
  • 2 teaspoons butter
  • 1 medium onion, finely chopped
  • ½ tablespoon garlic chopped
  • ½ tablespoon ginger chopped
  • Salt to taste
  • 1 medium green capsicum finely chopped
  • ¼ cup processed cheese grated
  • 8 cheese slices
  • Tomato ketchup to serve

Method

  1. Heat oil and butter in a non-sick pan, add onions and sauté till translucent. Add garlic and ginger, mix and sauté for 1 minute.
  2. Add salt and mix. Add capsicum, mix and sauté for ½ minute.
  3. Add baked beans, mix well and cook for a minute. Add cheese, mix and cook till it melts.
  4. Heat a sandwich griller.
  5. To make each sandwich, place a cheese slice on 4 bread slices. Top with a generous portion of bake beans mixture and cover with another bread slice. Place another cheese slice over the 2nd slice, spread a generous portion of baked beans mixture and cover with 3rd bread slice.
  6. Trim the edges. Grease the griller with a little butter, place 2 sandwiches at a time in the griller, cover and grill till grill marks appear on both sides.
  7. Cut each sandwich into triangles, place them on a serving platter and serve immediately with tomato ketchup.
