If there is one vegetable that is truly a nutritional hero then it is bound to be the carrot. A goldmine of nutrients, this is the reason they can be even termed as worth the other ‘karat’ (as in gold)! Ranging in colours from orange, black, pink to red, yellow and white, this delicious vegetable is within the reach of rich and poor alike and is rightly called the universal root. The best role that this winter vegetable can play – chomp on one as it is an excellent snack!

Ingredients for Baked Gajar Halwa with Gulab Jamun Recipe

  • carrots grated 8-10 medium

  • Gulab Jamun mini 20-22

  • Ghee 3 tablespoon

  • Sugar 1 cup

  • Green cardamom powder 1 tsp + + for sprinkling

  • Milk 2 cups

  • Rose syrup 1 teaspoon

  • Khoya/mawa ½ cup

Method

Step 1

To make gajar halwa, heat ghee in a non-stick pan, add carrots and sauté for 8-10 minutes. Add sugar, green cardamom powder and mix well. Add milk and cook till the mixture thickens.

Step 2

Preheat oven to 180º C.

Step 3

Put mini gulab jaamuns in a baking dish, spread gajar halwa over it, sprinkle cardamom powder on top, drizzle rose syrup and spread khoya evenly. Place the dish in the preheated oven and bake for 10-15 minutes.

Step 4

Remove the dish from the oven and serve hot.
