Barbeque Fish - SK Khazana Fish stuffed with some aromatics and baked in the oven This is a Sanjeev Kapoor exclusive recipe. By Sanjeev Kapoor 20 Jul 2020 in Recipes Course New Update Main Ingredients Indian Salmon ( Rawas), Barbeque sauce Cuisine Fusion Course Main Course Seafood Prep Time 21-25 minutes Cook time 16-20 minutes Serve 4 Taste Tangy Level of Cooking Moderate Others Non Veg Ingredients list for Barbeque Fish - SK Khazana 2 Indian Salmon ( Rawas) cleaned, deboned and slit into a butterfly as required Barbeque sauce 2 Italian lemons 10-12 Garlic cloves 7-8 Fresh red chillies to taste Sea salt to taste Crushed black peppercorns 2-4 sprigs Fresh oregano 2-4 sprigs Fresh thyme 2-4 sprigs Fresh rosemary 7-8 Garlic cloves sliced as required Olive oil for garnish Orange slices to serve Salad Method Preheat the oven at 200˚C. Slice the lemon and 4-5 garlic cloves thinly. Place fish on the worktop, sprinkle salt and crushed black peppercorns into the slit and also on either side of the fish. Brush barbeque sauce inside and outside the fish. Stuff each fish with 3-4 lemon slices, 3-4 dill sprigs, 1-2 oregano sprigs, 1-2 thyme sprigs, 1-2 rosemary sprigs, 2 red chillies and remaining garlic cloves. Tie the fish with a thread and make diagonally slashes on the fish, apply a little barbeque sauce on top and insert the garlic slices into the slashes. Drizzle some olive oil on each fish. Drizzle a little oil on the baking tray and place the fish in it. Place the remaining lemon slices and remaining red chillies on the side. Drizzle some more oil on top, keep the tray in the preheated oven and bake for 15-20 minutes. Take them out of the oven and place them on a serving plate. Cut and discard the thread.
