Barley Risotto In this healthy risotto Arborio rice is replaced by pearl barley yet it is just as tasty. This is a Sanjeev Kapoor exclusive recipe. By Sanjeev Kapoor 02 Sep 2016 in Recipes Course New Update Main Ingredients Barley, Oil Cuisine Italian Course Rice Prep Time 7-8 hour Cook time 16-20 minutes Serve 4 Taste Spicy Level of Cooking Easy Others Veg Ingredients list for Barley Risotto 1 1/2 cups Barley soaked 1 tablespoon Oil 1 tablespoon Garlic chopped 1 medium Onion finely chopped 3 cups Vegetable stock 1 teaspoon Red chilli flakes to taste Salt to taste Crushed black peppercorns 1/4 cup Parmesan cheese powder 1 cup + fo Spinach chopped Method Heat oil in a non-stick pan, add garlic and sauté for 30 seconds. Add onion, mix and sauté till golden. Add pearl barley, mix and cook for a minute. Add vegetable stock, chilli flakes, salt and crushed peppercorns, mix, cover and cook till the barley is done. Add parmesan cheese and mix well. Switch off heat, add spinach and mix well. Serve hot garnished with spinach.
