Ingredients list for Beetroot Coconut Barfi

  • 1 medium Beetroot , peeled and grated
  • 2 cups Fresh coconut , scraped
  • 1 tbsp _ for greasing Ghee
  • 1 cup Sugar
  • 1/2 cup Fresh cream
  • to garnish Walnuts
  • 3 tablespoons Powdered sugar
  • 1/2 teaspoon Green cardamom powder

Method

  1. Grease a barfi tray with some ghee.
  2. Heat ghee in a deep non-stick pan, add sugar, coconut and cream and mix well. Cook on medium heat, stirring continuously, for 15-20 minutes.
  3. Meanwhile roughly chop walnuts.
  4. When mixture begins to leave the pan, add the beetroot and mix well. Add powdered sugar and green cardamom powder, mix well and cook on medium heat for 2-3 minutes.
  5. Transfer the barfi mixture in the greased tray and spread it evenly. Sprinkle walnuts on top. Set aside till set and cooled down to room temperature.
  6. Cut into rectangular barfis. Insert a coloured ice cream stick in each barfi, arrange them on a serving platter and serve immediately.
