Ingredients for Beetroot Coconut Barfi Recipe

  • Beetroot , peeled and grated 1 medium

  • Fresh coconut , scraped 2 cups

  • Ghee 1 tbsp _ for greasing

  • Sugar 1 cup

  • Fresh cream 1/2 cup

  • Walnuts to garnish

  • Powdered sugar 3 tablespoons

  • Green cardamom powder 1/2 teaspoon


Step 1

Grease a barfi tray with some ghee.

Step 2

Heat ghee in a deep non-stick pan, add sugar, coconut and cream and mix well. Cook on medium heat, stirring continuously, for 15-20 minutes.

Step 3

Meanwhile roughly chop walnuts.

Step 4

When mixture begins to leave the pan, add the beetroot and mix well. Add powdered sugar and green cardamom powder, mix well and cook on medium heat for 2-3 minutes.

Step 5

Transfer the barfi mixture in the greased tray and spread it evenly. Sprinkle walnuts on top. Set aside till set and cooled down to room temperature.

Step 6

Cut into rectangular barfis. Insert a coloured ice cream stick in each barfi, arrange them on a serving platter and serve immediately.
