Ingredients list for Blueberry Orange Almond Loaf - SK Khazana

  • cup Fresh blueberries 1
  • 1/4 cup Orange juice
  • 2 teaspoons Orange zest grated
  • 2 1/2 cups Refined flour
  • 2 teaspoons Baking powder
  • 1/2 teaspoon Baking soda
  • 1/4 cup Almond flour
  • 2 Eggs
  • 1 cup Castor sugar
  • 4 tablespoons Butter
  • 1/4 cup Milk
  • 2-3 tablespoons Almonds chopped

Method

  1. Preheat oven to 180º C. Grease a loaf tin.
  2. Take refined flour in a mixing bowl, add baking powder, baking soda and almond flour together and mix.
  3. Break the eggs into another mixing bowl, add castor sugar and beat them well. Add butter and continue to beat till well combined.
  4. Add the flour mixture to the eggs in batches and fold in with a spatula. Add milk and fold to make a smooth batter.
  5. Add orange juice and mix well. Add orange zest, mix well.
  6. Transfer the batter into the loaf tin, arrange the blueberries on top, sprinkle almonds all over.
  7. Keep the tin in the preheated oven and bake for 20-25 minutes.
  8. Take the tin out of the oven, cool, demould, cut into slice and serve.
