By Sanjeev Kapoor 15 Jun 2016 in Recipes Course New Update Main Ingredients Brown basmati rice, Carrots Cuisine Indian Course Rice Prep Time 51-60 minutes Cook time 41-50 minutes Serve 4 Taste Mild Level of Cooking Moderate Others Veg Ingredients list for Brown Rice Vegetable Pilaf 2 cups Brown basmati rice 2 medium Carrots diced 1 Bay leaf 2-3 Cloves 1 teaspoon Cumin seeds 1 inch stick Cinnamon to taste Salt 1/2 cup Green peas shelled 2 tablespoons Rice bran oil 10-12 French beans chopped 1/4 medium Cauliflower separated into florets 6-7 medium Button mushrooms halved 2 Green chillies slit 100 grams Tofu cubed Method Soak brown rice in four to five cups of water for one hour. Drain and set aside. Heat rice bran oil in a deep pan. Add bay leaf, cloves, cumin seeds and cinnamon. Add drained rice and salt and sauté for one to two minutes. Add five cups of water. Bring to a boil. Add , cauliflower, mushrooms, green chillies and tofu. Stir green peas, carrots, French beansand mix. Bring to a boil. Reduce heat to low, cover and cook till done. Serve hot.
