Caramalized Onion and Fig Open Sandwich Whenever you want to have a different sandwich which is healthy and tasty too, try this one. This is a Sanjeev Kapoor exclusive recipe. By Sanjeev Kapoor 20 Jun 2018 in Recipes Course New Update Main Ingredients Onion, Figs Cuisine Fusion Course Snacks and Starters Prep Time 11-15 minutes Cook time 6-10 minutes Serve 4 Taste Mild Level of Cooking Easy Others Veg Ingredients list for Caramalized Onion and Fig Open Sandwich 1 large Onion sliced 3-4 Figs sliced 2 Bread slices sour dough 1 tablespoon Oil 1 tablespoon Sugar powdered ¾ cup Ricotta cheese 2-3 Black olives pitted, finely chopped 2-3 Green olives pitted, finely chopped 1 teaspoon Capers finely chopped 1 teaspoon Pickled onions finely chopped to taste Salt to taste Crushed black peppercorns 1-2 Thyme sprigs 1 teaspoon Balsamic vinegar as required Arugula leaves as required Alfalfa Method Heat oil in a non-stick pan. Add onion and powdered sugar and sauté till it caramelizes. Take ricotta cheese in a bowl. Add black olives, green olives, capers, pickled onions, salt, crushed peppercorns and mix well. Add torn thyme sprigs to caramelized onion and sauté for 30 seconds. Add balsamic vinegar, mix and cook for 1-2 minutes. Spread some ricotta cheese mixture on each bread slice. Put some arugula leaves, caramelized onion mixture and fig slices on top. Sprinkle some salt and crushed peppercorns on top. Put some alfalfa on top.
