Till a few years ago, cauliflower used to be a vegetable that is only available during winter but of late cauliflower is available year around especially in big cities. Referred to as the aristocrat of the cabbage family, the flowers are also eaten raw at times. While buying, look for fresh cauliflowers with compact white heads and green fresh looking leaves. Avoid and reject any loose or spread out heads – they are a sure sign of over maturity.

Ingredients for Cauliflower Chickpea Tikki Recipe

  • Cauliflower grated ½ medium

  • Chickpeas (kabuli chana) soaked overnight, boiled 1 cup

  • Salt to taste

  • Red chilli powder 1 teaspoon

  • Garlic chopped 1 tablespoon

  • Onion finely chopped 1 medium

  • Red capsicum finely chopped ½ medium

  • Cumin seeds 1 teaspoon

  • Processed cheese grated ¼ cup

  • Bread crumbs pankao for coating

  • Oil for shallow frying

  • Tomato ketchup 2-3 tablespoons

  • Chaat masala to sprinkle

  • coriander leaves chopped for garnish

  • micro greens mixed for garnish

Method

Step 1

Take chickpeas in a bowl and mash. Add cauliflower, salt, chilli powder, garlic, onion, red capsicum and cumin seeds and mix. Add cheese and mix well.

Step 2

Divide the mixture into equal portions and shape into tikkis.

Step 3

Coat the tikkis with breadcrumbs.

Step 4

Heat some oil in a non-stick pan. Shallow-fry tikkis from both sides till golden and crisp. Drain on absorbent paper.

Step 5

Pour tomato ketchup in a serving bowl and pile fried tikkis on top. Sprinkle some chaat masala over them and garnish with some coriander leaves and micro greens.

Step 6

Serve hot.
